One of Mexico's richest features is the huge variety of traditional food and drink. The diverse climates and landscapes offer an enormous quantity of vegetables, pulses, fruit and meat.

Mexican cuisine, like many other activities, is related to the ethnic and cultural mix that has finally developed into a people and a culture. On the one hand you can detect the rich pre-Hispanic influence, on the other hand you can't imagine Mexican food without the ingredients introduced by the Spanish… and not only the Spanish, it is equally impossible to make Mexican dishes without the spices from the east such as China and India.

In modern Mexican cuisine dishes that were eaten by the founders of Tikal or by Tizoc's contemporaries co-exist with some meat dishes eaten by the Spanish who came from Andalusia and Madrid. Furthermore, you can often find in the same recipe meat from Europe mixed with Mexican peppers and eastern spices.
